The \u00a8boxbole\u00a8is the thing on the white plate<\/p><\/div>\n<p>This is what we made in our cooking class last week.\u00a0 It&#8217;s a typical Mayan dish that hails from the Ixil triangle, a region northwest from here in the Cuchumatanes.\u00a0 If the weather gets better later this month, I&#8217;m going to try and go on a 5 day trek in this area.\u00a0 Anyway, <em>boxboles<\/em> are made with <em>masa (por supuesto)<\/em>, the leaves of something similar to something called something that sounds like \u00a8whiskey\u00a8, wisquiles?.\u00a0 Anyway, the leaves look like swiss chard in size and durability.\u00a0 There are also two sauces that accompany the main dish&#8230;one is made out of toasted\u00a0squash seeds and the other is a fiery hot sauce made with tomatoes and <em>chile coban,<\/em> a\u00a0super hot, super flavorful pepper.\u00a0 Although there were only a few ingredients, the dish was actually really intense, complex and most of all, filling.\u00a0 We all felt like we were carrying <em>masa <\/em>babies, or <em>boxbole<\/em> babies, after consuming just a\u00a0few\u00a0<em>boxboles<\/em>.\u00a0 Of course the fresh tortillas didn&#8217;t help the <em>masa<\/em> madness.<\/p>\n<p><strong>La Virgen<\/strong><\/p>\n<div>Here are a few pics from the desfile a week and a half ago that started the month of Mary here in Xela.\u00a0 This weekend the central park and the streets around it are closed to celebrate the first weekend in the month of Mary.\u00a0 I&#8217;m sure each little celebratory parade, street fair, \u00a0firecracker or stick of dynamite that is set off at 5am and then repeatedly every few hours, has some significance, but damned if I know what any of it means.\u00a0 \u00a0Or frankly, if anyone does.\u00a0 I never get a straight answer when I ask questions about what stuff means.<\/div>\n<div>\n<div id=\"attachment_579\" style=\"width: 624px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/triciakarsay.com\/guatemala\/wp-content\/uploads\/2010\/09\/2010-09-23_11-54-12_960.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-579\" class=\"size-full wp-image-579 \" title=\"2010-09-23_11-54-12_960\" src=\"http:\/\/triciakarsay.com\/guatemala\/wp-content\/uploads\/2010\/09\/2010-09-23_11-54-12_960.jpg\" alt=\"\" width=\"614\" height=\"461\" srcset=\"https:\/\/triciakarsay.com\/guatemala\/wp-content\/uploads\/2010\/09\/2010-09-23_11-54-12_960.jpg 1024w, https:\/\/triciakarsay.com\/guatemala\/wp-content\/uploads\/2010\/09\/2010-09-23_11-54-12_960-300x225.jpg 300w\" sizes=\"auto, (max-width: 614px) 100vw, 614px\" \/><\/a><p id=\"caption-attachment-579\" class=\"wp-caption-text\">A pretty conservative Mary. I have seen similar statues with bizarre additions of bouncing angels, demons, and other assorted effigies.
